Lasagna

How to make 2 pans of lasagna (one for your family and one to give away!- We brought our extra pan to my sister's house!)

Have your mom brown some 2 lbs. of hamburger while you cut up an onion.


Put the onion in the hamburger and cook until you can see through the onions.

Add some spaghetti sauce (64 oz.) and spices. We use oregano, salt and pepper. Add 2 cups of water and stir.

Cut up some parsley.

And beat 2 eggs.

Add 4 cups of cottage cheese.

Then add the parsley. And 1 lb. of mozarrella cheese.

And 1 cup parmesan cheese.


Stir.

Put sauce on the bottom of the pan.

Top with uncooked lasagne noodles. There is enough water in the sauce to cook and soften the noodles so don't boil them first!

Plop the cheese mixture on top of the noodles. Then add sauce and noodles and cheese again. End with sauce layer.

Top with more mozarella cheese. Now make the second pan.

Top with foil and bake at 350 degrees for 45 minutes.

Mmmmmm!

Caesar Salad

I made a Caesar Salad for supper tonight with my mom's help. Here is the recipe:

Pick 3 cloves from a bud of garlic. Put one clove in the garlic press...

Now SQUEEZE!

Then add 3/4 cup mayonnaise...

Now comes the icky part. Anchovies. I made my mom do this part.

Cut 5 anchovy fillets into tiny pieces...

Then add 2 Tablespoons of grated Parmesan cheese. Hey, check out my black eye. My friend Mac and I were riding my sister's trike and we wiped out. The handlebar hit my eye. OUCH.

Add 1 teaspoon of Worchestershire sauce...

And 1 teaspoon of Dijon mustard...

Then add 1 Tablespoon of lemon juice...

...and salt and pepper.

Stir it all together, mix, cover and put it in the refrigerator.
Time to make the croutons....

Cut 3 cloves of garlic into 4 pieces each.

Heat them in olive oil until they are brown. Then take them out of the oil.

Cut up bread into squares.

And put it in the hot garlicky oil. Stir and cook over medium heat until light brown.


Add salt and pepper and take off heat.

Taste them! They're really good!
Now wash some Romaine lettuce leaves and rip them into bite sized pieces. Stir in the dressing and the croutons and 4 Tablespoons of Parmesan cheese...

...and you have a Caesar Salad!
Mom said it was delicious. I refused to eat it. Anchovies. Ewww!

Grape Salad

My mom is typing for me again. I made a grape salad today to take to our friends' house for supper. I didn't try it but my sister did and she really liked it! Here's the recipe-

Wash 4 lbs. of grapes. We used red and green grapes. Dry on a towel and then cut each grape in half. Be careful when using a knife...
...especially if your sister decides to help.

In a mixing bowl combine 8 oz. of sour cream...

...8 oz. of cream cheese...

... and 1/2 cup sugar.

Add 1 tsp. vanilla extract. Mix until blended.

Pour over grapes.

Stir gently.

Sprinkle with 2 tablespoons brown sugar...

...and 4 oz. chopped pecans. Stir to blend.

Refrigerate and enjoy!
